A lively green soup, quick to make with the addition of butterbeans to thicken it up and make it delicious!
Butterbeans are a good alternative to adding potato to soup as they take no time to cook. Your list – (makes 3 nice bowls)
You’ll need
1 onion – 200g fresh spinach – 400g tin butter beans – 15g butter – 400 ml of vegetable stock – 150 ml milk
Boil your kettle and make up 1 pint of vegetable stock. Add a knob of butter to your pan and gently melt. Add a chopped onion and gently fry for a few minutes.
Add the drained and rinsed butter beans and cook for a further minute. Add the spinach and stir til wilted, then add the stock and 150 ml of milk. Taste and season if necessary. Blitz with your blender and serve with some nice crusty bread or a cheese scone!
Another sure-fire winner!
