Freshly pulled carrots from the vegetable garden this morning warranted a quick tasty salad for lunch with our first ripe apple from the orchard.
Flavoured with a little cumin and coriander, this wonderfully quick to prepare salad tastes great with a few other Middle Eastern style mezzes. A lovely flavourful lunch. Serves 2.
- 2-3 large carrots, scrubbed and grated
- 1 medium dessert apple grated
- 25 g pomegranate seeds
- juice of half a lemon
- 1 tablespoon olive oil
- half a teaspoon each of cumin and coriander powder
- salt and pepper
Mix the olive oil with the spices in a bowl and add the lemon juice. Whisk it all together with a fork and then add the grated carrots and apple, salt and pepper. Give everything a good stir. Add the pomegranate seeds and serve.
It’s hard to get “likes” for salad recipes, it seems. They are my favorites, however! Carrots and pomegrante – yum! Sounds like a perfect combo.
