Carrot and apple salad with pomegranate.

Freshly pulled carrots from the vegetable garden this morning warranted a quick tasty salad for lunch with our first ripe apple from the orchard.

Carrot and apple salad with pomegranate

Flavoured with a little cumin and coriander, this wonderfully quick to prepare salad tastes great with a few other Middle Eastern style mezzes. A lovely flavourful lunch. Serves 2.

  • 2-3 large carrots, scrubbed and grated
  • 1 medium dessert apple grated
  • 25 g pomegranate seeds
  • juice of half a lemon
  • 1 tablespoon olive oil
  • half a teaspoon each of cumin and coriander powder
  • salt and pepper

Fresh carrots

Mix the olive oil with the spices in a bowl and add the lemon juice. Whisk it all together with a fork and then add the grated carrots and apple, salt and pepper. Give everything a good stir. Add the pomegranate seeds and serve.
