A deliciously easy salad with a Japanese sashimi influence.

imageIn your salad bowl (or Tupperware box for lunch) add a tablespoon of olive oil, a small squeeze of wasabi paste, a splash of soy sauce. Mix together. If you’re taking this to work just place the following ingredients on top of this mix and toss everything together when you’re ready to eat. This way the salad won’t go soggy!

Chop up a small avocado (toss in a little lime or lemon juice to stop it from discolouring), a few rings of red onion, some chunky cucumber, and with scissors cut a sheet of seaweed into slivers. Add a mix of green salad leaves (rocket, watercress and baby spinach is good). Add a slice or two of snipped up smoked salmon. Mix everything together and add some sesame seeds for additional flavour. How tasty is this!
