Inspired by Jenny Chandler’s kitchen demonstration at Borough Market yesterday praising the humble but versatile egg, a simple but delicious meal made with beautiful mushrooms and a couple of hen’s eggs. Simple, quick, delicious. Just how I like it.
Simple egg suppers
Scrambled egg wraps with tomato and spring onions.
Tasty scrambled egg with tomatoes and spring onions, rolled in a multi grain wrap. Great for a quick supper or breakfast by the sea! I’ve got a little stove in my beach hut and so this is a nice little breakfast treat by the sea.
Delicious poached eggs on turkey and Harrissa mince
I’ve just cooked and eaten this and it was delicious! Low fat, high protein and nice and spicy. Quick to put together and definitely worth it.

Wild garlic and English goats cheese omelette
Wild garlic is growing now. It has a gentle oniony taste and works well in this omelette. I’ve added a few chopped leaves to a simple rocket salad too which I’ve drizzled with olive oil and a little lime juice. Delicious!
Wild garlic is growing along the river bank, under the trees and amongst pretty blue bells. But beware. Wild garlic always seems to be surrounded by stinging nettles so be careful not to get stung! Only pick a few of the leaves so as to leave the plant intact. And obviously pick where dogs don’t walk. Enough said.
Smoked salmon and scrambled egg
Easy and quick, tasty and nutritious. Delicious breakfast or quick supper! Serves 1.

A delicious spicy comforting supper. Mop up the tomatoey sauce with some crusty bread.
