Smoked salmon and scrambled egg

Easy and quick, tasty and nutritious. Delicious breakfast or quick supper! Serves 1.

Smoked salmon and scrambled eggs

2 eggs per person, a splash of milk, a knob of butter, salt and pepper. 2 slices of smoked salmon finely chopped. Double up for 2.

Whisk the eggs in a bowl adding a splash of milk. Melt the butter in a frying pan and melt. Don’t let it brown. When the butter is sizzling, add the egg mix and the smoked salmon. Let the mix sit in the pan for about 30 seconds without stirring , then with your spatula lift and fold around the pan until soft and velvety.

Serve with some hot buttered toast.
