I’ve just cooked and eaten this and it was delicious! Low fat, high protein and nice and spicy. Quick to put together and definitely worth it.

You’ll need –
Chop the onion and garlic and fry in a little olive oil in a frying pan. After a few gentle minutes add the turkey mince, the coriander powder and continue to fry for about 5 minutes, moving everything around the pan while it cooks.
Add the Harrisa paste, the pinenuts and the halved tomatoes. Continue to cook for a minute or two. Add about 60ml of boiling water and give a stir. Season with salt and pepper.
Make 2 wells in the mixture and crack an egg into each. Cover the frying pan with a lid (or a baking tray if you don’t have a lid) and gently let the eggs poach in the mixture for about 4 minutes.
Snip a few coriander leaves over the top. Delicious!
If, by any chance, you have any of the cooked mince left over it is fab in a pitta sandwich with yoghurt and pomegranate seeds and a little coriander!
