A very quick and nutritious supper dish, ready in no time. Buy a few prawn crackers to go with it! This feeds 2 people.
For ease of speed I’ve bought one of those packs of stir fry veg from the supermarket, a pack of prawns, some noodle nests. Use miso soup mix for the sauce base, and some soy sauce and chilli flakes to taste. I also like to add some chilli sambal to add some zing. Eat with prawn crackers! Put a sachet of miso soup into a bowl, boil the kettle and add about half a pint of boiling water. Give it a stir and then sit a nest of noodles in the mix, turning from time to time so the noodles soften and absorb some of the miso mixture.
Drizzle some olive oil into a frying pan or wok and when hot add the vegetables and prawns, they will only take a minute or two to cook. Add the noodle mix, some soy sauce and some chilli flakes. Serve with some chilli sambal if you have some and maybe some prawn crackers. Delicious!
