I fancy a refreshing dessert that will use up a couple of lemon and limes that are looking for something to do! Quick to make and just a little something sweet and refreshing after supper al fresco.
A very short shopping list.
Zest the lime and add that to a small saucepan. Add the juice from the lime and the lemon. Add a heaped tablespoon of sugar and gently heat until the sugar dissolves. Pour into a jug. In the same pan heat 250 ml of double cream until it just comes gently to the boil. Pour over the fruit syrup. When it’s cooled a little add a heaped tablespoon of greek yoghurt, and whisk to combine.
Pour into a pretty glass or teacup, and pop into the fridge to chill. Add a basil or mint leaf and serve. You could serve with a piece of shortbread on the side if you like. Delicious!
