To serve 2 – you’ll need a fresh mozzarella, 200g broad beans, lemon zest, a sprig of mint. For the dressing, a lemon, olive oil, salt and pepper. Boil the kettle. Put the broad beans into a pan and boil for 1 minute. Drain and put the beans into a bowl of cold water to keep them green. When they are cold squeeze them out of their skins. Add to a bowl, mozzarella in the middle, add the zest of a lemon, some sea salt, and drizzle over some lemon juice and olive oil, and tear the mint leaves into the salad. Delicious!
