A lovely quick flavoursome supper. Salmon marinated in soy and Mirin for a few minutes, pan fried for a few minutes – perfect!
You’ll need for 2 people.
Mix 1 tablespoon of Mirin and 1 of soy sauce with a teaspoon of brown sugar. Place the salmon into the mix. Turn after a few minutes for a couple of minutes more. Drizzle some olive oil in your pan and when it is hot add the salmon (keeping the marinade in the bowl). Turn the salmon over after a couple of minutes and cook for a couple of minutes more.
Snip the watercress a little so that it is in nice easy fork size pieces, chop a third of a cucumber into chunks. Mix together.
Remove the salmon from the pan. Add 1 tablespoon of rice vinegar to the marinade mix and heat in the pan. Place the salmon on a plate with the salad and drizzle over some of the delicious sauce. Sprinkle a few sesame seeds over the top. Delicious.
