Sweet and creamy, delicious comforting soup. Mop up with some lovely crusty bread.
You’ll need for 2 good sized servings –
- 7oz of sweetcorn, either canned or frozen
- 1 small sweet potato (approx 5oz peeled)
- 1 medium onion
- 2 small cloves of garlic
- 2oz butter
- 1 pint of vegetable stock
- 2oz of cream or milk if you prefer
- chives to garnish
- salt and pepper
Boil the kettle, make your vegetable stock. Melt the butter in your saucepan and add the chopped onion and garlic. Stir gently and add the peeled and finely chopped sweet potato. Gently sauté until the potato has softened, then add the sweetcorn and the vegetable stock and cook for about 5 minutes until the potato is nice and soft. Add the cream or milk and season with salt and pepper.
Blend until very smooth. Add a few snipped chives as a garnish and serve with some crusty bread.
