Delectable chocolate and orange brownies, flavoured with a little orange extract, crystalized orange peel and cranberries. Delicious!
- 200g dark chocolate (at least 70% cocoa solids)
- 250g unsalted butter
- 200g caster sugar
- 4 eggs
- 75g self raising flour
- 1 Tablespoon cocoa powder
- 50g dried cranberries
- 50g crystalized orange peel (chopped)

Put your oven on 180c. Grease and line a square baking tin (approx 30cm square) with baking paper. Break the chocolate into pieces and put into a bowl with the butter to melt over a pan of simmering water (do not allow the bowl to sit in the boiling water). Keep an eye on it and when melted take off the pan and allow to cool slightly.
Whisk the eggs with the sugar in another bowl until thick and creamy. Add to the cooled chocolate and gently mix together.
Sift the flour and cocoa powder into the mix and carefully stir.
Add the dried fruits and a teaspoon of the Valencian orange extract. Stir to combine.
Spread the mixture evenly into the baking tray and bake in the oven for approximately 20 minutes. The top should have a light crust and there should be a slight wobble underneath.
Allow to cool before cutting.
