Mint and elderflower cooler.

Deliciously refreshing on a hot day. Having spent the day working in the vegetable garden and brushing against the mint, it was destined for a super cooling drink!

  • A handful of fresh mint added to a teapot of boiling water
  • elderflower cordial
  • crushed ice
  • a little fresh mint to serve

Make up a pot of fresh mint tea. Allow to cool and then chill in the fridge.

Fresh mint tea

Take a tall glass, add lots of crushed ice, a serving of elderflower cordial (homemade preferably!) and pour the chilled mint tea to dilute. Add a sprig of mint and go and sit somewhere cool in the garden to enjoy!
