Delicious little fritters of salmon and chilli and a Greek yoghurt, lemon, garlic and coriander dip.
I’ve got a small fillet of roasted salmon leftover but you could buy a piece of roasted salmon.
In a bowl whisk 2 eggs. Add 1.5 oz/45 grm of self raising flour. Whisk. Chop finely 3 spring onions, a small red chilli, a clove of garlic, salt and pepper and about 100 grams cooked salmon (flaked). Add to bowl and mix with a splash of milk.
Add a drizzle of olive oil to a frying pan. When hot add a tablespoon of the mix and cook for 2-3 minutes on either side.
Mix a couple of tablespoons of Greek yoghurt with a good squeeze of lemon juice, chopped garlic clove, a few snipped up coriander sprigs, salt and pepper.
Serve with quartered lemons. Delicious!
