Cranberry and walnut scones

Quick to make and great to take in your lunchbox tomorrow for a mid morning snack.

Cranberry and walnut scones

Makes about 6 scones with a 2″ cutter.

Ingredients list

Put your oven on 220c. Put 8oz of self raising flour, a pinch of salt, 1 tsp baking powder into your blender. Add 2oz of soft butter and whizz to breadcrumb consistency. Add the sugar, give it a quick mix. Then add 5oz of milk and mix to a soft dough. Add 1 oz of dried cranberries, and 1 oz of chopped walnuts. Mix into the dough. (You can do this all by hand if you don’t have a blender by mixing the flour, baking powder and butter to breadcrumbs, adding the sugar and then the milk and fruit and nuts.)

Roll out to about 1″ thickness on a floured board. Cut into rounds of about 2″. Brush the tops with a little milk and bake in the hot oven for about 10 minutes until golden.

Great warm from the oven with a little salted butter and a cup of tea. Delicious!
