A really quick and delicious roasted salmon, new potato and tomato supper. Super quick, super delicious, Mediterranean flavours. A taste of summer!
You’ll need – (serves 2)
Put the kettle on. Put the oven on 200c. When the kettle has boiled put the small new potatoes in a pan and cover with boiling water. Cook for about 10 minutes or until tender. Drain, and put into a roasting tray drizzled with olive oil. Add a thickly chopped courgette, about 200 grams of vine tomatoes, 2 garlic cloves, half a lemon sliced, and the leaves of about 3 stalks of oregano. Place the salmon on top (if fish has skin on put skin side up). Add salt and pepper. Roast for about 15 minutes.
Squeeze a little lemon over the top. Serve adding some of the juices from the pan to the plate.
