Lemon sole – roasted with asparagus and olives

I love sole and this lemon sole is Delicious, so easy and such a great treat with mixed summer veg and a spritz of balsamic and lemon to make it a wonderful summery supper. And all those colours, must be good for you!

Lemon sole

You’ll need:-

2 lemon sole, a bunch of asparagus, a dozen green olives, 1 red onion, 1 lemon, 3 large tomatoes, new potatoes, garlic, fresh oregano, a green salad. Olive oil and balsamic vinegar.

Put the kettle on. Put the oven on 200c. Boil your new potatoes.

Line an oven proof dish with foil. Drizzle oil onto this and a little balsamic vinegar. Place 3 garlic cloves, half the asparagus, some olives on the tray. Wash the fish, cut the heads off if you prefer not to see them on your plate! Score the lemon sole in several places and place on top.

Add the chunky red onion, the remainder of the asparagus, several sprigs of oregano, salt and pepper and several thick slices of lemon. A drizzle of olive oil and put in the oven for 15 minutes.

Drain your potatoes, add a knob or 2 of butter, some sea salt and pepper. Make a simple dressing for your salad with balsamic vinegar and olive oil. Serve – such a pretty dish, so simple to put together and super delicious!image
