It’s Great British Sandwich Week from May 11 – 17. Here are a few of my favourite sarnies to celebrate!
Prawn and Marie-Rose and basil.
Mix 3 Tbs of mayonnaise with 1 Tbs tomato ketchup, a pinch of smoked paprika. Mix in 150g of cooked prawns, shred some basil leaves into the mix, add a squeeze of lemon juice. Sandwich between 2 slices of your favourite bread.
Salmon and seaweed wrap with wasabi and soy.
Place a sheet of seaweed on a board, place the tortilla wrap on top. Add a slice or 2 of smoked salmon, a few pieces of chopped cucumber or half a sliced avocado, a little soy sauce and a little wasabi paste. Roll up firmly and cut in half diagonally.
Turkey meatball pittas.
Gently fry the turkey meatballs for about 10 minutes. Add to pitta pockets and dress with a mix of yoghurt, lemon juice, salt and pepper and torn mint leaves.
Hummus with caramelised onion and roasted red pepper
Spread 2 pieces of bread with hummous, add caramalised onions, roasted red peppers (both from jars for ease) and some rocket leaves.
A mighty Nicoise sandwich for a hearty lunch.
Mix a small can of tuna fish with mayonnaise. Spread onto 2 slices of white bread. Add a few thin slices of tomato, a sliced boiled egg, a few anchovies, a few sliced green olives, rocket leaves, some red onion rings, salt and pepper. Delicious!
