Couldn’t be easier. A lovely treat for tea and ready in no time. Pop the kettle on and make this quick bake.
- 4oz self raising flour
- 4oz margerine
- 4oz caster sugar
- 2 eggs
- 1 teaspoon baking powder
- 1 lemon
- 3oz icing sugar
Lightly grease and base line a 7″ cake tin. Put the oven on 180c.
In your mixer put 4oz of self raising flour, 4oz of caster sugar, 4oz of margarine 1 tsp of baking powder, the zest of 1 lemon and 2 eggs. Mix until everything is blended together and pour into your tin.
Bake in the centre of the oven for about 20 minutes. The cake should be risen, slightly golden and if you put a skewer in it should come out clean. Cool for 15 minutes in the tin on a wire rack. To make the icing mix 3 oz of icing sugar in a bowl with just enough of the squeezed lemon juice to mix into a loose paste. Drizzle on the top of the cake. Gorgeous with a cup of tea!
