Fresh basil and tomato salad with feta.

The first of the garden basil is now ready, and the tomatoes are not far behind. I adore that summery taste and smell of freshly picked basil and am making what must be the fastest and tastiest salad for lunch today. Just a few ingredients and a piece of crusty bread to mop up the juice. Delicious.

Basil and tomato salad

You’ll need – serves 4

Fresh basil and tomato salad ingredients

Wash and slice the cherry tomatoes in half. Chop up a red onion and gently mix with the tomatoes, torn basil leaves, chunky feta and salt and pepper. Drizzle over some olive oil and a little balsamic vinegar. So simple but so good! The earlier you prepare this salad the better. I’m eating the leftovers 2 days later and I think it’s even more delicious!
