Something warm and delicious on a cold evening, a clafoutis with sweet blueberries.
You’ll need – for 2 people.
Put the oven on 180c. Grease a small baking tin or flan dish (about 6″ sq or equivalent) and dust with a little caster sugar.
Crack an egg into a mixing bowl, add 1 Tbs sugar, 1 tsp vanilla extract and whisk until it is cream in colour. Add 1 level Tbs of flour and mix into the egg mixture, then add the melted butter, and 1 Tbs of milk and 2 Tbs of cream. Put the washed and drained blueberries into the mix and then pour into the baking tin.
Bake for approximately 30 minutes. Check by inserting a skewer or sharp knife which should come out clean. Sprinkle with a little sugar on the top and serve with a little cream. Delicious!
