Honeyed goats cheese salad.

Sweet and tangy, a lovely combination. Grilled goats cheese drizzled with honey on crunchy toasted ciabatta and a simple salad with hazelnuts.

Honeyed goatscheese salad

You’ll need for 1 person.

A 70g round of goats cheese, a small handful of hazelnuts, some runny honey, green salad. 1 small ciabatta . And for the dressing, olive oil, white wine vinegar, mustard, honey.

Put your grill on. Slice 3 slices of ciabatta and toast. Arrange your green leafy salad onto a plate. Add a small handful of hazelnuts chopped in half.

Cut the goats cheese into 3 slices (cut the rind off the two round ends as the dry ends won’t melt onto the ciabatta so well). Place on top of the pieces of toasted ciabatta and put on a baking sheet. Drizzle the goats cheese with some runny honey and place under to grill until the cheese begins to melt and caramalise.

Honey on goatscheese and ciabattabatta

Serve on top of the green salad and make a quick dressing using 1 Tbs olive oil, 1 tsp mustard, 1 tsp honey, 1 tsp white wine vinegar. Mix all together and pour over the leaves. Scatter the halved hazelnuts over the top. Delicious!
