A tasty little seafood pasta, flavoured with tomatoes, saffron, garlic and chilli.
You’ll need (for 2)
Boil your kettle. Cook the penne pasta.
In a heat resistant bowl place the tomatoes and cover with boiling water. After a few minutes remove the tomatoes from the bowl with a spoon and peel off the skins and chop the tomatoes. Soak the saffron in a tablespoon of warm water. Drizzle some olive oil in a pan and add the chopped garlic, chilli, courgette and chopped up tomatoes. Add the saffron and it’s water, salt, pepper, and half a teaspoon of sugar. Gently cook.
Add 1Tbs of the pasta water to the tomato sauce, add the fish mix and heat through for a few minutes. Drain the pasta. Add the pasta to the tomato and fish mix.
Add the leaves of some garden herbs, I’ve used oregano and thyme. Serve with a little bread and a glass of white wine and go and eat in the garden. Delicious!
