With a taste of Asia, lemongrass, coriander, chilli and garlic, these burgers are full of flavour, pack a ‘meaty’ punch and are great with a healthy pepper salad.
These make a great tasting healthy burger and take very little time to prepare and cook.
You’ll need (serves 2)
- approx 200g each of raw prawns and cod fillet
- 1 small red chilli, deseeded and finely sliced
- 1 clove of garlic, chopped
- small handful of fresh coriander, chopped
- 1″ piece of fresh lemongrass (outer skin removed) very finely sliced
- zest of a lime
- salt
For the salad
- 1 red pepper, deseeded and finely sliced
- 1 yellow pepper, deseeded and finely sliced
- small handful of fresh coriander, chopped
- 1 kos lettuce
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 lime juiced
- 2 tablespoons of olive oil
Put the prawns and cod, chopped garlic, coriander, lime zest, chilli, lemongrass and a little salt into your food processor and blitz until well mixed but not completely smooth. Shape into two patties and chill for 15 minutes.
When ready to cook, heat a little olive oil in a pan and gently cook the burgers for approximately 10-12 minutes, turning during cooking and making sure that they are piping hot in the centre.
For the salad, finely slice the peppers, cut the lettuce into slim chunks, add the chopped coriander and mix together with the soy, fish sauce, lime juice and olive oil. Serve with the burger. I think you’ll agree there’s no need for a burger bun!
