Tasty scrambled egg with tomatoes and spring onions, rolled in a multi grain wrap. Great for a quick supper or breakfast by the sea! I’ve got a little stove in my beach hut and so this is a nice little breakfast treat by the sea.

Breakfast on the beach.
It has been one of those days to get up early, go down to the beach, breakfast, and get on with a few maintenance jobs on the beach hut.
Lavender ice-cream.
The lovely lavender fields in Kent.
On the many train journeys I take up to London from Sussex I’ve snatched glimpses through the trees of the lavender fields. They are so pretty, fields of purple, and I was determined to visit. Having tracked the train route into London I found that we were passing fields that are grown by Castle Farm, the largest lavender farm in the UK. They have been growing lavender since 1998.
Hummus with fresh pomegranate.
I’ve made a big bowl of this for a party. Hummus is great for dipping crudités or bread sticks into and also goes well with mixed platters of mezze, spread on bread or enjoyed with meats and salads. It’s a really useful addition to the table and it’s so easy to make. And making your own always tastes better!
Peachy Melba!
I’ve actually used nectarines for this today as they were plentiful, but either peaches or nectarines will make this lovely dessert. It’s years since I made it but it’s still as good today as I remember it.
Kale crisps.
My lovely friend Victoria has brought me some fresh kale from her vegetable garden. I probably should be juicing it but, feeling naughty, have decided to make kale crisps. And do they disappear! Gone in a flash. Good snacking.
Flavoured waters.
I love having something interesting in the fridge to drink and flavoured water is so much more interesting than just plain water. So here are a few ideas! Allow the flavours to infuse for an hour or two in the fridge. You’ll soon be drinking lots of water! Strawberry and cucumber. Orange and fresh ginger.
Slice a few strawberries and slices of cucumber and add to water.
Peel a piece of fresh ginger, cut a few slices and add to the water with a couple of slices of orange. Chill.
Cut a few chunks of watermelon, add a few sprigs of fresh rosemary to water and chill.

Courgette and onions in a creamy mustard sauce and tasty cheddar and breadcrumb topping.
I have a glut of courgettes, it always happens of course. I wait for the first tiny sweet courgettes to arrive and pick them when small but so often find that there are one or two big ones lurking under the leaves. And when they start growing it’s difficult to keep up. However they are easy to eat up in this tasty dish. Continue reading
