Caponata.
Delicious caponata, full of flavour, sweet and tangy and great to eat warm for supper or cold in your lunchbox tomorrow.
Little mushroom fritters.
Delicious little mushroom fritters, or Polpettes di funghi! Bite sized deliciousness dipped into fresh tomato sauce. Great on their own or added to the table as an antipasto.
Warm salad of roasted sweet potato and couscous.
An autumnal salad, warm and spicy, and very satisfying on a cold October evening. Cubes of roasted sweet potato with garlic, cumin and cinnamon, in a couscous and feta salad. If there’s any left over it’s very nice in your lunchbox tomorrow. And perfect for Meat Free Monday.
Mushroom and egg bake.
Inspired by Jenny Chandler’s kitchen demonstration at Borough Market yesterday praising the humble but versatile egg, a simple but delicious meal made with beautiful mushrooms and a couple of hen’s eggs. Simple, quick, delicious. Just how I like it.
7 juices for 7 breakfasts.
As part of my eat clean month I’m juicing fruit from the garden. And there is plenty! You’ve got to love picking fruit from the tree and juicing it. But even if you can’t pick your own, a few choice fruits mixed with vegetables and you’re getting a good start on your 5 a day. I’ve also found that juicing encourages me to eat well all day. Each recipe serves 1.
Quince and blue cheese salad.
I have foraged, with my neighbour’s permission, a few beautiful yellow quinces from her tree. Don’t be tempted to sink your teeth into these beautiful fruits, they need a long simmer to soften, and then change colour to a beautiful golden pink soft fruit. And whilst they simmer, the kitchen is filled with the perfume of this fragrant fruit.
Couscous with halloumi, preserved lemons, and courgette.
I adore halloumi, griddled, and served with salad or vegetables. I have bought a jar of preserved lemons from my favourite farm shop Fullers and am going to make a big plate of couscous salad to add to the lunch table today. The preserved lemons turn this dish from something good to something really very good!
Cauliflower, squash and sweet potato curry.
Hot and full of spicy flavour, perfect on it’s own to warm you on a chilly autumn evening, or lovely with steamed fish.
If you have any left over, just blend into a soup for tomorrow with a little vegetable stock. This isn’t a ten minute dish to cook, but it’s quick to prepare and will then need to simmer for about 35-40 minutes. So time to make a phone call or put your feet up!
Turkey lasagne with roast tomatoes.
The evenings are getting cooler and its nice to cosy up with something warm and comforting to eat in the evening. This makes a nice supper dish to eat with a couple of friends.
