Hot and fiery but quick and easy to make for a supper with a kick! I’m using fresh herbs as I’ve got some growing outside. But you can use dried herbs if you’ve got some in the cupboard. Add a little fresh basil if you can though as it does impart a little something extra!

Wild garlic and English goats cheese omelette
Wild garlic is growing now. It has a gentle oniony taste and works well in this omelette. I’ve added a few chopped leaves to a simple rocket salad too which I’ve drizzled with olive oil and a little lime juice. Delicious!
Wild garlic is growing along the river bank, under the trees and amongst pretty blue bells. But beware. Wild garlic always seems to be surrounded by stinging nettles so be careful not to get stung! Only pick a few of the leaves so as to leave the plant intact. And obviously pick where dogs don’t walk. Enough said.
Moroccan style pan fried fish with cucumber and tomato salad
Sea bass with a chermoula style spice rub, pan fried with a little butter. Crispy skinned, drizzled with caper butter and served with a very fresh tasting cucumber and tomato salad with shallot and mint. Really fresh and healthy for a super quick supper!
English rhubarb fool
This must be one of the most delicious and simple English desserts. A delightful flurry of gorgeous creamy fool with the tart contrast of rhubarb. A sprig of mint on top and you are transported to the kitchen garden!
Goan fish curry
I don’t wish to insult my friends in Goa, but this is my attempt at a Southern Indian fish curry!
Enjoy with some Basmati rice, a naan bread. I like a little chutney too.
Hot chocolate brownies
These are not, as the name implies, supposed to be eaten straight from the oven, tempting though that may be! These are brownies flavoured with chilli to give a little kick. Something tasty to enjoy with a cup of coffee as a decadent dessert tonight, if you can wait that long!
Quinoa and broccoli salad with poached chicken
It’s London Marathon weekend and yesterday Rob, a keen sportsman, asked me if I could suggest a high protein low fat lunchbox meal to take in to work. You can make this the night before, eat it for supper even! adding a few more things to it that take your fancy, maybe some feta, some seeds.
Lemony lime fool

Crispy based pesto pizza
I’m a thin and crusty pizza person and using tortilla wraps is a great way to make a crispy base. Tortilla wraps crisp up nicely in the oven, and are really quick to cook. I’m using pesto as the base sauce tonight.
