The evenings are getting cooler and its nice to cosy up with something warm and comforting to eat in the evening. This makes a nice supper dish to eat with a couple of friends.
My haul of gorgeous mushrooms from Borough Market make me want to cook something really simple so the mushrooms take centre stage!

I’ve got a little arrabiatta sauce left over from the prawn arrabiatta dish I made the other night so I’m using that as a sauce base. You can use a thick tomato sauce and a sprinkle of chilli flakes otherwise. I’m using a tortilla wrap as a base as they crisp up and are a quick alternative to making your own.

Hot and fiery but quick and easy to make for a supper with a kick! I’m using fresh herbs as I’ve got some growing outside. But you can use dried herbs if you’ve got some in the cupboard. Add a little fresh basil if you can though as it does impart a little something extra!
I’m a thin and crusty pizza person and using tortilla wraps is a great way to make a crispy base. Tortilla wraps crisp up nicely in the oven, and are really quick to cook. I’m using pesto as the base sauce tonight.
