A tasty summery soup flavoured with turmeric. Grate a little Parmesan on the top and a basil leaf or 2.
A taste of summer!
Gently fry the chopped onion in a drizzle of olive oil and a knob of butter in your pan. Slice the courgettes and add to pan. Add the tin of tomatoes and then fill the tin with water and add that to the pan too. Add your stock cube and stir gently. Add a tsp or turmeric. Simmer gently.
When the courgettes are soft, about 10 minutes, blitz with your blender, add a little more water to thin and stir. Serve with some grated Parmesan and a basil leaf or 2. A taste of summer! Delicious.
