Put things together the night before to roast the chicken tomorrow. It takes just a few minutes and the difference it makes to the chicken is well worth it – soft and succulent. I don’t have any butter milk and use just ordinary milk for this dish. It’s still very good indeed! And if you can’t find black beans use pinto or mixed salad beans.

A trip to Singapore
So exciting to be in Singapore. Fabulous food everywhere. I love the variety of Asian food, and it’s available everywhere all of the time. Delicious little dimsum for breakfast, chicken rice, laksa, nasi goreng – all favourites of mine. And of course wonderful food from all around the world. But while we’re here I think we’ll stick with some local dishes, visit some of the bustling hawker centres and get some ideas to cook up something when I get home. Saturday. What a lovely way to start a new blog. Today, before I’m even ready, a lovely lady in Louisiana has liked one of my recipes! That has made me so happy. So, especially for her, Stephysweetbakes, I’m going to bake some easy quick and really delicious cheese scones. So tasty!

Well. You’re in for a treat tonight. I love roasted garlic, roasted fish and am a really big fan of mash (there are so many variations – but more of that later!) This will feed 2 for supper (or keep the leftover fish and mash for fishcakes tomorrow! – yum!)

‘Leftover roast’ chicken soup
I like a thick and nutritious soup, and any leftovers from the roast chicken dinner makes this taste like a terrific ‘taste memory’ of yesterday’s meal. You can thin to your personal taste.
The leftovers + a chopped up red onion
Fry off the onions and then the other ingredients. Add any leftover gravy and/or some chicken or veg stock.
Blend according to your taste.
How delicious is this! Well. I’ve just eaten it, and… it’s delicious.
