I’m making up some of this delicious and versatile salad to do 2 meals. It’s a great base to add lots of other things to and really good for a lunchbox for work. If you only have a little left over from a supper you can run some rocket through it, chickpeas, feta, mint even a little cold chicken, black olives, pinenuts. The possibilities are endless!

Lemon sole – roasted with asparagus and olives
I love sole and this lemon sole is Delicious, so easy and such a great treat with mixed summer veg and a spritz of balsamic and lemon to make it a wonderful summery supper. And all those colours, must be good for you!

Easiest ever marmalade ice cream!
I fancy something sweet for supper tonight and I’ve got a pot of double cream looking for something to do. So I thought I’d try marmalade ice cream (I’ve always thought it would be a delicious ice cream flavour!).
Swordfish tartare on a carpaccio
Fresh swordfish carpaccio with an avocado and swordfish tartare. A very simple and impressive starter.
Murgh Chicken Masala
A delicious spicy Indian curry with fresh ginger, spices and coriander in a coconut and tomato sauce.

Going to the cinema this evening so for something quick to eat have put together my healthy sandwich which takes absolutely no time to do and is really delicious!

A lively green soup, quick to make with the addition of butterbeans to thicken it up and make it delicious!
Turkey burger with cumin and coriander
Quick and delicious home made turkey burger flavoured with Middle Eastern spices and a yoghurt and lemon relish.
Blueberry jelly with basil cream
A really tasty jelly dessert with a summery basil cream. This seems very retro to me, so many happy early memories eating jelly, I think it’s almost fashionable again!
