The first of the garden basil is now ready, and the tomatoes are not far behind. I adore that summery taste and smell of freshly picked basil and am making what must be the fastest and tastiest salad for lunch today. Just a few ingredients and a piece of crusty bread to mop up the juice. Delicious.
I like a comforting fish pie and this is one! A little mustard in the white sauce and some roasted garlic in the mash. What’s not to like? I’m using a mix of cod, salmon and haddock.

Still loving the fresh English rhubarb that’s in season I bought 4 sticks today to make a super quick crumble. I’m flavouring it with basil, the two go so well together, and making a basil cream to top it off. The crumble mix couldn’t be easier, and gives a bit of crunch to the topping. Flavouring the cream with a little basil adds even more summer flavour to the pudding.

Based on the great meringue picnic disaster at Eton this lovely summery dessert couldn’t be easier to make and is enhanced with the scent and taste of elderflowers.
I love the scent of elderflowers in the house when making cordial, (there’s definitely a candle fragrance to be made by someone who knows how!)
I was inspired by Jamie Oliver’s superfood salad YouTube clip that I watched on the train back from London yesterday, so when I got back home I had a ferret around to see what ingredients I could use up based on this high protein salad.
Oh so simple and so tasty. The perfect quick dessert for a sweet English treat. Glorious strawberry ice cream with fresh English strawberries.

Made so easy as you can buy pomegranate seeds in the chilled fruit section and you won’t get any of the bitter bits from the pith. But personally I love to cut the gorgeous fruits in half and bash out the pips. I maybe sad!
There’s gorgeous English watercress around now so try and buy that!
