Fresh basil and tomato salad with feta.

The first of the garden basil is now ready, and the tomatoes are not far behind. I adore that summery taste and smell of freshly picked basil and am making what must be the fastest and tastiest salad for lunch today. Just a few ingredients and a piece of crusty bread to mop up the juice. Delicious.

Rhubarb and basil crumble and cream!

Still loving the fresh English rhubarb that’s in season  I bought 4 sticks today to make a super quick crumble.  I’m flavouring it with basil, the two go so well together, and making a basil cream to top it off. The crumble mix couldn’t be easier, and gives a bit of crunch to the topping. Flavouring the cream with a little basil adds even more summer flavour to the pudding. Strawberry jam ice cream!

Oh so simple and so tasty. The perfect quick dessert for a sweet English treat. Glorious strawberry ice cream with fresh English strawberries. Strawberry icecream I bought a pot of delicious strawberry jam in the Cowdray Farm Shop on my day trip yesterday. What’s especially nice about it is it’s high strawberry content – 81%. Watercress and fennel salad with pomegranate

Made so easy as you can buy pomegranate seeds in the chilled fruit section and you won’t get any of the bitter bits from the pith. But personally I love to cut the gorgeous fruits in half and bash out the pips. I maybe sad!Watercress fennel and pomegranate salad
